Grandma’s Cucumber Salad
Every summer, Krystal’s grandma would make this simple dish alongside her sisters and mother. Some of the best recipes are passed down from generation to generation.
Simple as it may be, Grandma’s Cucumber Salad is a light, tangy and healthy dish that could easily pass as a delicious appetizer or guilt-free, late night snack.
The freshness of the dill combined with the heat from the red pepper flakes makes for a wild tasteful ride. Let’s not forget about the health benefits from apple cider vinegar, too.
Studies have shown that daily consumption of as little as 15 ml of apple cider can reduce your overall BMI and body weight.
INGREDIENTS
- 4 medium cucumber
- 1/4 cup apple cider vinegar
- 2 teaspoon sugar
- 1/2 teaspoon red pepper flakes
- 2 tablespoon olive oil
- 1 tablespoon dill finely chopped
- 1 teaspoon salt and pepper
INSTRUCTIONS
1. Thinly slice cucumbers into 1/8 inch thick rounds
2. In a large bowl, mix all other ingredients and whisk until combined
3. Add cucumbers to oil mixture and refrigerate for at least 30 minutes (overnight preferred) for flavors to marinate
4. Enjoy!
